From 31 January to 2 February in the town of Posuelos in the north of the Argentine province of Jujuy, bordering with Chile and Bolivia, will be a traditional lamb Festival (Festival del Cordero), gastronomic and cultural event held on the eve of the carnival.
As every year, the breeders of the villages Cienaga Grande Laginilyas, Rodeo, Cerrillos, La Intermedia, Puesto del Marqués, Rodeo Chico and others will gather in Posuelose to take part in the festival. On the morning of January 31 for three days, they put up their animals on public display. Friday, February 1, will begin with a cattle exhibition. At 10:00 am Mass will be held, and at 11:00 – Conference on the legislation in the field of animal husbandry. At noon, serves lunch and at 14:00 will be held a walking tour of the bay Posuelos, is a natural monument. At 16:00 will be a competition shearing scissors and machine and demonstration of slaughtering. In the evening, the action will be transferred to the stage, with performances by local readers, poets and dancers. At 22:30 they will be replaced by the artists from neighboring towns.

On Saturday ceremonial event, a procession of the Lambs-winners, award ceremony, a dinner of Creole cuisine and folklore festival, and in the evening the locals are waiting for dances.
At the fair you can taste various dishes of lamb meat, typical of the region – meat cooked on the grill or baked in a clay oven, chanfainu (offal stew), soup kalyapurka meat, corn, and vegetables, and many others.
